We dreamt up the idea for sencilla coffee in mid-2023, as we (Keith and Maria) were living in New York City. One of the most enjoyable aspects of living in the city for both of us was visiting different coffee shops throughout the five boroughs, and experiencing the coffee they offered. From Ethiopia natural beans exhibiting flavors of fruitiness, to a Colombian Juan Peña Oak Barrel anaerobic fermentation that was especially memorable, the coffee experiences in NYC were truly exquisite. We wanted to create similar encounters for people in . Keith’s multi-dimensional experience as a barista and coffee roaster gave us the base-line knowledge of starting a business, and Maria’s desire for good coffee was the driving force!

In pursuing our passion for coffee, we have traveled across countries and conversed with farmers and coffee professionals to learn what truly makes the best cup. Time and time again, we have been wowed by unexpected coffees brewed in remote towns in the mountains of El Salvador, and along the beaches of Colombia. It is our hope and goal to bring these coffee experiences to the town of Eugene, and to allow people to encounter the beauty in enjoying the most simple cup of coffee.
